WHAT'S IN A MUSSEL?

 

The first project for Sense Lab is a collaboration with SLU (Swedish University of Agricultural Sciences) which entails sensory testing of farmed mussels. The research and sensory descriptions will help to enhance Swedish grown produce and their flavour profiles. It’s part of a larger project that aims to identify ways in which small scale aquaculture farms can successfully market their produce nationally and internationally.
